DIRECTIONS

Trim the lettuce heads, removing the outer leaves and end of the stem, making sure the core is still intact. Cut the lettuce heads in half lengthwise. Wash the lettuce thoroughly and dry. Set aside.

In a small bowl, mix together the plums, pepper, tomatoes and cucumber. Set aside.

In a container or jar with a lid, add the flaxseed and water and let set for 5 minutes. Add the remaining salad dressing ingredients and shake to combine.

Place each lettuce wedge on a plate. Top each evenly with the plum mixture, drizzle with the desired amount of dressing and serve.
